Terroir & Winemaking Craft
- The Renowned "En Beaumont" Climats: Sourced from steep, south-facing terraced slopes of blue marl (*marnes bleues*) in the historic village of Château-Chalon. This unique Lias soil retains heat while instilling Savagnin with severe mineral precision, laser-focused acidity, and monumental longevity.
- Traditional Biological Aging (*Sous Voile*): Fermented naturally and aged for a mandatory 6 years and 3 months in neutral 228-liter oak barrels without topping up (*ouillage*). A natural layer of yeast (*le voile*) forms on the wine's surface, slowly protecting it while creating the signature sotolon compound responsible for its famous curry, walnut, and dried fruit profile. Bottled in the traditional 62cl *Clavelin*.
Highlights
- 100% Savagnin harvested from blue marl soils in the "En Beaumont" lieu-dit, Château-Chalon AOC.
- A radiant 2016 vintage packed with toasted walnuts, dried apricots, curry spice, Fenugreek, and chalky minerality.
- Crafted by Domaine Grand, offering virtually indestructible cellaring potential (50 to 100+ years).
Tasting Notes
- Appearance: Deep, glowing amber-gold with brilliant topaz reflections.
- Nose: Intensely aromatic, complex, and unashamedly oxidative. It opens with aromas of toasted walnuts, hazelnut skins, and dried yellow apricots, accompanied by curry leaf, cardamom, bitter orange zest, dried flowers, and crushed limestone.
- Palate: Bone-dry, full-bodied, and piercingly concentrated. The entry brings an explosive wave of savory nuttiness and spice that glides across a crystalline mid-palate, held together by electric acidity into an endlessly long, saline-driven finish.
Serving Suggestion
- Temperature: Serve at cellar temperature (14–16°C; avoid over-chilling) to allow its intense oxidative aromatics to express fully.
- Decanting: Decant for 1 to 2 hours before serving. Once opened, Vin Jaune can comfortably remain open for several weeks without losing freshness.
- Western Pairing: Aged Comté cheese, Poulet aux Morilles (chicken with morels and Vin Jaune cream sauce), roasted veal, or wild mushroom risotto.
- Asian Pairing: Sichuan spicy chicken (La Zi Ji), Indian coconut curries, braised pork with chestnuts, or aged soy sauce dishes.
