The Chénas cru is the smallest in surface area of ​​the Beaujolais vintages, which makes it a rare wine. The climate is continental. This unique 9 hectare plot, on a steep slope, faces east between 310 and 380 meters above sea level. The granite, covered with Quartz crystals gives this wine a distinct personality which makes its reputation.

Manual harvest, sorting table, partial destemming. A first phase of semi-carbonic fermentation lasting a few days is followed by a period of regular punching down, à la “Bourguignonne”, and pumping over, ie in total between 18 and 20 days of fermentation.
About 30% of the harvest is aged in oak barrels for a few months, to find roundness and elegance during the final assembly.

The name of this cuvée suggests a pronounced minerality mingling aromas of lilac, peony and peach. This very balanced wine has a rather floral attack on the palate and before revealing mature tannins. It is a very complex and elegant wine. The finish is tight with almost salinity. This wine goes very well with complex dishes in sauce, meats or grilled meats.
