Vibrant, Highly Detailed, and Purely Mineral

Hailing from a legendary alluvial fan in Calistoga, the 2021 Eisele Vineyard Sauvignon Blanc is a pristine and crystalline expression of this historic terroir. The exceptionally cool, slow-ripening 2021 vintage brought brilliant clarity to the white varieties, emphasizing high-toned aromas of key lime, white peach, and crushed flint over heavy tropical fruit extract. Medium-bodied and intensely vibrant, it offers a beautifully chiseled, saline mouthfeel balanced by a sophisticated, waxy texture that extends into an incredibly long, energetic finish.

Terroir, History & Acclaim

  • The Singular Terroir: Tucked into the foothills of the Palisades range in northern Napa Valley, the Eisele Vineyard spans an alluvial fan dominated by volcanic gravel, cobbles, and stones. This exceptionally well-drained soil limits vine vigor naturally, yielding small berries with intense skins and an unmistakable ink-and-iron minerality.
  • Biodynamic Purity under French Guidance: Managed by Latour-owner François Pinault’s Artémis Domaines since 2013, the property relies completely on certified biodynamic farming methods. This focus on natural soil ecology allows the winemaking team to extract high native definition and stunning aromatic precision from the site.

Highlights

  • A benchmark, estate-grown Sauvignon Blanc blended with a small fraction of Sauvignon Gris from the fabled Eisele Vineyard.
  • 100% certified organic and biodynamic viticulture handled under elite French technical direction.
  • Meticulously aged across a combination of French oak barrels and concrete eggs to achieve an optimal marriage of texture and crisp mineral tension.

Tasting Notes

  • Appearance: Clear, bright pale straw yellow with vibrant platinum flashes.
  • Nose: High-toned, pure, and intensely detailed, bursting with primary scents of key lime, white peach, and fresh pear, beautifully framed by undertones of gunpowder flint, lemon verbena, and crushed gravel.
  • Palate: Strictly bone-dry, medium-bodied, and highly linear. A crystalline entry of zesty citrus fruits leads into a chiseled mid-palate with a fine-grained, subtly waxy texture. A razor-sharp vein of native acidity commands the core, focusing the wine into an exceptionally long, mouthwatering, and highly saline finish.

Serving Suggestion

  • Temperature: Serve slightly cool at 10–12°C. Avoid serving it ice-cold, as a slightly warmer cellar temperature allows the incredible aromatic precision and textural detail to fully blossom.
  • Decanting: A brief 15-minute decant is highly beneficial to allow the high-tension mineral elements to completely express themselves. This bottle is designed to evolve beautifully and gain further complexity over the next 5–8 years in a cellar.
  • Western Pairing: Pan-seared sea bass with lemon butter, roasted oysters with herbs, goat cheese crostini, or a delicate lobster salad.
  • Asian Pairing: Steamed garoupa with ginger and scallions (清蒸石斑魚), sautéed scallops with asparagus, or light vegetable tempura.
