Domaine François Carillon is based in Puligny-Montrachet and works with vines over 50 years old on clay-limestone soils, treating this Aligoté with a level of care more commonly associated with its top Chardonnay cuvées. The wine is hand-harvested and fermented/aged in barrels for about a year, with restrained new oak, which keeps the focus on freshness and terroir. The result is a surprisingly classy Aligoté with both purity and structure.
Tasting Notes
Expect an intense, brilliant color with golden tones, and aromas of grapefruit, lime, apple, pear, and a touch of tropical fruit. On the palate it is fresh, invigorating, and structured, with balanced acidity, a refined texture, and a saline, crisp finish. One tasting note also mentions spicy apple, citrus, and fresh fruit with notable density and minerality.
Serving and Cellaring
Serve at 10–12°C. It’s excellent as an aperitif and pairs well with shellfish, snails, grilled fish, salads, and Asian or Indian dishes. One trade source suggests a drinking window of 2025–2029, while another notes 5–10 years of longevity.
