Blended primarily from the 2016 and 2017 vintages with reserve wines, hand-harvested grapes undergo traditional method secondary fermentation in bottle, followed by extended lees aging of 5 years to develop complexity and finesse. As a family estate since 1900 committed to sustainable and increasingly organic viticulture, this production yields a pale gold sparkling wine with persistent fine bubbles and remarkable poise.
Tasting Notes An elegant, vinous sparkling with ripe stone fruit and profound chalky minerality, reflecting Avize's Grand Cru terroir. The nose reveals pastry, vanilla, lemon oil, and hints of spices and butter. On the palate, it is medium- to full-bodied and tense, with vibrant acidity, round suppleness, and flavors of dried corn husk, yeasty autolysis, and deep chalk, leading to a delicate, slightly bitter finish.
