From the heart of Côte des Blancs' Avize "Champ Caïn" lieu-dit at the hillside base, this Chardonnay ferments spontaneously in large oak barrels, completes malolactic, ages on lees with weekly bâtonnage, then bottles without fining or filtration. Extended lees aging (7-10+ years) and minimal dosage yield a tense, terroir-transparent Champagne emphasizing Avize's chalky power and elegance.
Tasting Notes
Bright pale gold; floral-lemon nose with truffle, white flowers, citrus, pear, almonds, and buttery hints. Delicate palate reveals emphatic salinity, light wood spice, mineral tension, grapefruit-nut complexity, creamy texture, and crystalline, chalky finish.
