From Jacquesson's rare lieu-dit series, this Chardonnay undergoes destemming, brief skin maceration for half the grapes, spontaneous oak barrel fermentation, and extended lees aging (7-18+ years depending on vintage) without fining or filtration. Low/no dosage emphasizes Dizy's stony purity and tension, vinified to highlight the site's steep slope and limestone depth in limited production.
Tasting Notes
Bright yellow; complex nose of lemon zest, chalk, yeast, cream, vegetal notes, infusion, and toasted dried fruits. Powerful, lively palate with fine pleasant bubbles, vertical length, tight texture, salinity, fruit-citrus persistence, and chalky minerality.
