Our idea of this cuvée: a certain sweetness on the nose with notes of pear juice, blond tobacco, gingerbread and apricot. Apricot, grapefruit and rose then fill the glass after aeration. The balance in the mouth is immediate and its touch is reminiscent of very ripe fruit. Its minerality is highlighted in a long and fresh finish, a guarantee of harmonious aging.
Many of the vines for Les Epinays are over 100 years old. Harvested by hand. Using natural yeast for long fermentation in casks without racking or sulphiting. Then, it went through 18 months aging in concrete tank.
