Hand-harvested grapes from the balanced 2018 vintage—marked by moderate conditions yielding concentrated yet fresh fruit—undergo destemming and fermentation in open-top fermenters with wild yeasts, followed by aging in 33% new French oak barrels to enhance structure without overpowering the fruit. Founded in 2013 by Jean-Nicolas Méo and Jay Boberg, this production emphasizes organic farming and Burgundian techniques, yielding a ruby red wine with garnet edges and poised intensity.
