Jasper Morris [89-92] pts
- 89-92 Points ★★★☆☆ - Jasper Morris Inside Burgundy: "Rich full black purple. Rich on the nose but nothing awkward. The plump black cherry fruit fills the mouth right to the back of the palate and covers the tannins, with some luscious perfumed notes reappearing at the back. Tasted Nov 2019."
- The Shadow of Bonnes-Mares: The Premier Cru *Les Baudes* sits in a highly prestigious position at the northern end of Chambolle-Musigny, directly below the Grand Cru *Bonnes-Mares*. Sharing a similar slope and limestone-dominant soil profile, it naturally imparts a broader, more masculine, and structural core to the wine compared to the softer, fleshier crus on the southern side of the village.
- The Sérafin Philosophy: Based in Gevrey-Chambertin, the Sérafin family applies their legendary, uncompromising signature to their Chambolle holdings. Known for their use of old vines, low yields, and a robust application of new French oak, their winemaking style emphasizes structure, extract, and monumental aging capacity, allowing the solar density of 2018 to be framed magnificently.
Highlights
- 100% Pinot Noir sourced from ancient vines in the Premier Cru Les Baudes, located just beneath Bonnes-Mares.
- Vinified in a traditional, highly structural style by the acclaimed Domaine Sérafin Père & Fils.
- A beautifully built, age-worthy 2018 red Burgundy that traded Chambolle's classic lacy lightness for architectural power and broad-shouldered density.
Tasting Notes
- Appearance: Deep, dense ruby-purple core with great opacity and a bright magenta rim.
- Nose: Powerful, solid, and deep. It features concentrated aromas of black cherry, dark bramble berries, and wild plum, layered beautifully with vanilla bean, sweet wood smoke, toast, and an underlying crushed-limestone minerality.
- Palate: Bone-dry, medium-to-full-bodied, and remarkably structural. The palate delivers an muscular wave of dark red and black fruits, quickly supported by a persistent, firm framework of structural tannins. Fresh acidity cuts cleanly through the solar weight, leading into an extraordinarily long, robust, and savory finish.
Serving Suggestion
- Temperature: Serve at cellar temperature (15–16°C). Keeping it cool ensures the dense fruit remains precise and balances the powerful wood structure.
- Decanting: A 1-to-2 hour decant is highly recommended. Given the natural muscle of Les Baudes and Sérafin's traditional wood management, this wine needs ample air to soften its edges. It possesses exceptional architectural bones built to cellar seamlessly through 2038+.
- Western Pairing: Roasted duck with an earthy cherry reduction, roasted venison loin, slow-braised beef short ribs, or prime cuts of grilled rib-eye.
- Asian Pairing: Peking Duck (北京烤鴨), slow-braised pork belly (東坡肉), or wok-fried black pepper beef medallions.
