Produced by Domaine Sérafin Père & Fils from old vines in the Les Cazetiers 1er Cru parcel near Mazis-Chambertin on clay-limestone soils with eastern exposure at around 300m elevation. Hand-harvested grapes undergo traditional fermentation in concrete or stainless with gentle extraction, followed by 12-18 months aging in French oak barrels (30-50% new), yielding a concentrated, structured wine at approximately 13.5% alcohol.
Tasting Notes
Deep ruby-red; aromas of black cherry, liquorice, game, leather, earth, and subtle oak spice. Full-bodied palate with sweet, pliant fruit, marked firmness, good energy, minerality, and a complex, persistent finish blending dark berries and savory notes.
Serving and Cellaring
Serve at 16-18°C in a Burgundy glass; decant 1-2 hours. Drink from 2029-2040+ for integration and tertiary development; pairs with game, braised beef, wild mushrooms, or aged hard cheeses.
