From the visionary grower-producer Olivier Collin in Congy, Champagne, the Les Pierrières NV Extra Brut is a single-vineyard biodynamic Champagne from the Coteaux du Petit Morin. Crafted from 100% Chardonnay in the 1.2-hectare Les Pierrières plot with chalk and silex soils, it’s hand-harvested, naturally fermented in oak, and aged 36 months on lees. Disgorged in 2015 with minimal dosage, it reflects the region’s unique terroir with a pale golden hue and refined precision.
Winemaking Process
Collin’s commitment to biodynamic practices defines this Champagne. The 2015 disgorgement, primarily from the 2013 base vintage with reserve wines, is fermented in used Burgundy barrels with partial malolactic fermentation, enhancing texture. Extended lees aging and minimal intervention highlight the chalky, silex-driven terroir, creating a wine of striking intensity and finesse.
