Terroir & Biodynamic Vision
- The Alluvial Gravel Terroir: "Le Kottabe" is sourced from estate-managed plots lying on flat alluvial plains mixed with sand, shingle, and limestone silt around Wintzenheim. This fast-warming, free-draining soil profile coaxes an immediate, elegant aromatics out of the Riesling vines, focusing on pure, high-spirited fruit rather than heavy or austere structural lines.
- Artistry and Symbiosis: Managed by sisters Céline and Isabelle Meyer, Domaine Josmeyer has been a champion of certified organic and biodynamic viticulture since 2004. In the cellar, natural fermentations take place in historic, hundred-year-old large oak casks (*foudres*). This century-old practice softens the high acidity gently without adding any oak tannins or barrel flavors, guaranteeing maximum terroir transparency and life in every bottle.

Tasting Notes
- Appearance: Pale straw-gold with clear, shimmering watery-white flashes.
- Nose: Intensely fresh, bright, and airy. It bursts forward with clean aromas of lime blossom, tart pink grapefruit, and crunchy green orchard fruit, accented by a delicate touch of white field flowers and wet stones.
- Palate: Completely bone-dry, light-to-medium-bodied, and linear. The entry is lively and direct, revealing a juicy center of lime pulp and tart apple skin. A precise spine of chiseled acidity cuts clean through the mid-palate, carrying the fruit into a highly refreshing, saline-flecked, and dry finish.
Serving Suggestion
- Temperature: Serve chilled at 8–10°C. A fresh chill highlights the electric citrus profile and emphasizes the wine's thirst-quenching dryness.
- Decanting: No decanting necessary. Pop, pour, and enjoy immediately, though it will comfortably evolve in the cellar over the next 4 to 6 years.
- Western Pairing: Fresh goat cheese salads, pan-seared river trout with lemon, raw oysters, grilled white fish, or traditional choucroute alsacienne.
- Asian Pairing: Steamed shrimp dumplings (蝦餃), classic vegetable tempura, light sashimi plates, or Vietnamese fresh herb summer rolls.
